Yams In Orange Cups

Ingredients

Cook yams and mash. For each cup of yams add:
1 1/4 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon orange rind grated
3 tablespoons orange juice concentrate
1/2 teaspoon salt

Directions:

Make orange rinds into cups, place in muffin tin, and fill with mixture. Sprinkle tops with small amount of brown sugar and paprika. Bake at 375° until heated through and lightly browned.
