My mom, Dorothy Rosenberg, sent this lower-calorie recipe and it's great. I've provided the exchanges for the filling in case you want to use a diferent pastry recipe.
1. Combine sugar, sweetener, and cornstarch in a medium saucepan with juice and mashed peaches. Bring to a boil, reduce hear, and simmer about 5 minutes, until mixture is thickened, stirring constantly. Set aside to cool.
2. Place sliced peaches in pastry shell. Spoon cooled peach mixture over peaches and chill thoroughly.
