Combine potatoes, cheese, egg, onion, seasoning, and bacon bits, if desired. Roll into balls and flatten into cakes. Turn over into crushed onion rings, then place on greased baking pan. Bake about 20 minutes at 375°. If you like them toasty brown, turn over and bake an additional 5 minutes.
Editor's Extra: Okay to use instant potatoes. Also okay to freeze and bake from frozen. And really okay to try different varieties of crushed chips and crackers for coating.
