Cook sweet potato, bell pepper, and onions in 1 tablespoon butter 3–5 minutes, stirring occasionally, until sweet potato is tender. Stir in curry powder and salt. Cool slightly. Stir together egg, flour, yogurt, and sweet potato mixture. Brush one side of each won ton with remaining melted butter. Press each won ton, buttered side up, into greased muffin cup. Spoon sweet potato mixture into won tons. Bake at 350° for 12–15 minutes or until golden brown.
