Season bread crumbs with seasoning. Dip mushroom slices in beaten eggs, then into bread crumbs, pressing firmly. Deep-fry mushrooms in 350° oil in small batches for 1–2 minutes, or until mushrooms are browned. Drain and sprinkle with salt.
Note: Can be made ahead, then reheated in a 350° oven about 10 minutes before serving.
Fun Fact: Keep several mixed seasonings—Cajun, seafood, Greek—on your spice shelf for handy one-shaker flavoring. There are quite a few seasonings that are produced locally that are especially fun to pick up when you travel. If you simply love it, chances are you can find it online.
