Sauté onion in 1 tablespoon oil. Add sauerkraut and cook 2 minutes. Spread each tortilla with 1/4 cup cheese. Lay 1/6 pastrami down center, and spread 1/4 cup sauerkraut mixture over.
Roll tortillas up jellyroll-style, so that pastrami and sauerkraut run down the length of middle. Brush rolls with vegetable oil. Bake on cookie pan until lightly browned, about 10 minutes. Cut each roll on diagonal into 6 pieces. Serve with Russian dressing for dipping.
