Separate dough into 4 rectangles; seal perforations. Mix pepperoni, cheese, seasoning, and egg yolk in a bowl. In another bowl, whisk egg white until foamy; set aside.
Divide pepperoni mixture over each rectangle, spreading to within 1/4 inch of edges. Roll up jellyroll-style; pinch seams to seal. Cut each into 6 pinwheels.
Place cut side down on greased baking sheets; brush tops with egg white. Bake at 375° for 12–15 minutes till golden brown. Serve warm.
