Combine all ingredients except cheese in a slow cooker. Cover and cook on low setting for 8 hours, or on high setting for 4 hours. Skim off any excess fat; stir in cheese until melted.
Tip: Scoop out the centers of small round bread loaves for bread bowls in a snap…extra special for serving hot soup or chili.
