Salad greens, such as spinach, are often gritty-especially if you buy them by the bunch at farm stands. To get rid of the grit, separate the leaves from any heavy stems. Place the leaves in a large bowl of cold water and agitate gently with your fingers, allowing the grit to fall to the bottom of the bowl. Lift the leaves out of the water with your hands and place in a colander. Pour out the water and refill the bowl with fresh. Continue washing the greens in this fashion-as many as six times-until grit free. Always transfer the greens to a colander before discarding the water. If you pour the greens with the water into the colander, you’ll just wash the grit back on.
