In a large wok or 3- to 4-quart pan, brown ground beef until no longer pink and then remove with a slotted spoon and set aside. Cook onion for 2–3 minutes. Add bok choy, and cook until tender. Stir in cooked beef, ginger, garlic, soy sauce, sugar, and broth. Simmer over low heat for 5 minutes. Add tofu to pan. Simmer until tofu is heated through.
