In a frying pan, brown ground beef until meat is no longer pink. Drain if necessary. Season meat with half the taco seasoning. Set aside to cool.
In a bowl, combine cream cheese, sour cream, mayonnaise, remaining taco seasoning, and onion. Spread mixture into bottom of a 9 x 13-inch pan. Sprinkle cooled meat mixture over top. Refrigerate until ready to serve.
Immediately before serving, sprinkle cheese, lettuce, and tomato over meat layer. Serve with tortilla chips. Garnish with sliced olives if desired.
