Farm-Raised Catfish Williamsburg


Serves: 4

Ingredients

1 teaspoon salt, divided
8 (4-ounce) catfish filets or equivalent
1 (2-ounce) bottle Tabasco
1 teaspoon pepper
2 cups cornmeal mix
4 cups oil or more if needed

Directions:

Lightly salt fish on both sides; liberally sprinkle and rub fish with Tabasco. Refrigerate for 1 hour. Combine pepper, cornmeal mix, and remaining salt. Dredge fish in cornmeal mixture; drop into oil heated to 375°. Cook until golden brown, about 5 minutes; drain well.

CAUTION: Do not overload oil with fish. Temperature of oil during cooking should not drop below 360°. Four cups of oil will cook about 2 fillets at a time.
