Place tuna in shallow dish or zip-closure plastic bag. Combine honey, soy sauce, lemon peel, lemon juice, mustard, and salad oil in a small bowl. Whisk to blend. Pour marinade over fish and turn to coat well. Cover tightly. Marinate in refrigerator 1-3 hours or longer, if desired.
Preheat barbecue grill to medium-hot. Arrange tuna steaks on hot grill. Cook tuna over moderate heat about 4-6 minutes per side, basting occasionally until fish reaches desired doneness. Garnish with lemon wedges, if desired.
