Fettuccine Primavera

Ingredients

1 cup broccoli florets
1 cup zucchini squash, sliced
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 teaspoon dried basil leaves
3/4 cup margarine (1 1/2 sticks)
2 fresh tomatoes, peeled and cut into wedges
1/2 cup mushrooms, sliced
1 teaspoon salt
1 (12-ounce) package fettuccine noodles
1 Parmesan cheese, grated

Directions:

In skillet, over medium-high heat, sauté broccoli, zucchini, green pepper, onion, and basil in margarine until tender. Stir in tomatoes, mushrooms, and salt, and simmer 5-10 minutes. In the meantime, cook fettuccine as directed on label; drain. Toss vegetable mixture with hot fettuccine. Sprinkle with parmesan cheese.
