Yield: 30 - 36 cookies
Cream butter and brown sugar. Add yolks and vanilla; mix well. Stir in flour and salt. Roll into 1-inch balls. Dip each ball into egg whites then roll in chopped nuts. Place on ungreased cookie sheet. Bake 5 minutes at 375°. Make thumb print in center of each cookie. Bake 8 minutes longer. At Christmas, these are pretty filled with green Butter Cream Frosting and topped with a spoonful of crabapple jelly or a maraschino cherry.
Butter Cream Frosting:
Cream butter and sugar, stir in vanilla and add enough milk to make frosting smooth and of spreading consistency.
