Sift together flour, salt, and baking powder. Mix until creamy the shortening, sugar, eggs, and vanilla. Mix in flour mixture, then add coconut. Mix well. Refrigerate for 1 hour or more.
Form dough into 1-inch balls. Place on cookie sheet; flatten with bottom of a glass covered with cheesecloth or dipped in sugar. Bake in a 350° oven, about 12 minutes or until done.
