Cook the prosciutto in a large, nonstick skillet over medium heat until the bottom of the skillet is coated with a thin film of fat and the lean parts of the prosciutto are crisp. Remove and reserve the prosciutto.
Place the dumplings in the pan, flat-side down, and cook over medium-high heat until the bottoms are browned.
Meanwhile, combine the wine, teriyaki sauce, and water in a small bowl. Add to the skillet, shaking once to distribute the liquid evenly. Cover and steam the dumplings until they are tender and the liquid has reduced to a glaze. Add the scallions and reserved prosciutto shake to coat the dumplings with glaze. Transfer to a platter and serve immediately.
