Heat the oven to 450°F. Toss the onions and oil in a roasting pan until the onions are thoroughly coated. Roast until the onions are caramelized, about 30 minutes, tossing them halfway through. Scrape up any brown bits clinging to the bottom of the pan.
Chop the onions in a food processor, using the steel blade until they become cohesive and sticky but not smooth. Mix with the fig preserves and salt. Serve with cheese or roasted strips of chicken, or as a condiment with grilled or roasted meats.
