Mix the applesauce and fig preserves warm in a saucepan or microwave, if desired.
Mix the ricotta, egg yolks, sugar, flour, and vanilla in a large bowl. Beat the egg whites and salt to soft peaks, and fold into the ricotta mixture.
Heat a griddle or large, heavy skillet over medium-high heat and spray with oil. Make small 2- to 3-inch pancakes, browning them on both sides, about 2 minutes per side. Serve immediately with some of the applesauce.
