Marinated Tuna, Sicilian Style |

The tuna in this recipe is just gently steamed, then dressed with fresh herbs and seasonings. It would make a cool and refreshing summer meal served on a bed of baby salad greens or arugula with a potato salad.
1 1/4 pounds tuna steaks, about 3/4-inch thick
2 tablespoons red wine vinegar
Salt
3 to 4 tablespoons extra-virgin olive oil
1 clove garlic, finely chopped
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh mint
1/2 teaspoon crushed red pepper
1 Fill a pot that will fit a steamer rack with 1/2 inch of water. Bring the water to a boil. Meanwhile, cut the tuna into 1/2-inch-thick strips. Spread the fish on the steamer rack. Set the rack in the pot. Cover the pot and allow the tuna to steam for 3 minutes or until slightly pink in the center. Test for doneness by making a small cut in the thickest part of the fish.
2 In a deep dish, beat together the vinegar and salt. Add the oil, garlic, herbs, and crushed red pepper. Stir in the tuna pieces.
3 Let stand about 1 hour before serving.
