Shrimp in Garlic Sauce |

Makes 4 to 6 servings
Shrimp cooked in a garlicky butter sauce is more popular in Italian-American restaurants than it is in Italy. It is often called "shrimp scampi" here, a nonsensical name that is a clue to its non-Italian origins. Scampi is not, as the name implies, a style of cooking but a type of shellfish that looks a lot like a miniature lobster. As for cooking them, scampi are generally grilled with nothing more than a little olive oil, parsley, and lemon.
Whatever you call it, and whatever its origins, shrimp in garlic sauce is delicious. Offer lots of good bread to soak up the sauce.
7 tablespoons unsalted butter
1/4 cup olive oil
4 cloves large garlic, finely chopped
16 to 24 large shrimp, peeled and deveined
Salt
3 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
1 In a large skillet, melt the butter with the olive oil over medium heat. Stir in the garlic. Cook until the garlic is lightly golden, about 2 minutes.
2 Turn up the heat to medium-high. Add the shrimp, and salt to taste. Cook 1 to 2 minutes, turn the shrimp once, and cook until they are just pink, about 1 to 2 minutes more. Stir in the parsley and lemon juice and cook 1 minute more. Serve hot.
