Preheat oven to 350°. Arrange sliced potatoes in 2- to 3-quart oblong oven-safe casserole dish; set aside. Put butter in 4-cup glass measure or microwave-safe bowl. Microwave in HIGH about 45 seconds to melt. Blend in flour, milk, and mustard. Microwave on HIGH 3 minutes. Stir and add onion. Microwave on HIGH until sauce thickens. Add 1 cup cheese and stir until melted. Fold in ham, salt, and pepper. Pour sauce over potatoes. Sprinkle with remaining 1/3 cup cheese and top with bread crumbs. Bake 50–60 minutes, until potatoes are tender.
