Wash cauliflower; cut into small flowerets. Cook, covered, in a small amount of water in saucepan 8–10 minutes or until tender-crisp; drain.
Combine beer and 1 1/4 cups flour in bowl; mix well. Dip cauliflower in batter. Deep-fry in 375° oil until golden brown; drain. Serve Cheese Sauce with cauliflower.
Cheese Sauce:
Melt butter in heavy skillet. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Add milk gradually. Cook over medium heat until thickened, stirring constantly. Remove from heat. Add cheese, stirring until melted.
