Make a collar for a medium soufflé dish with aluminum foil set aside. Mix unflavored gelatin, salt, and sugar, together in top of double boiler. Beat egg yolks until light and add. Gradually stir in milk and water cook over hot water, stirring constantly for about 10 minutes. Blend together cherries and orange juice add and mix well chill until slightly thickened. Beat egg whites until stiff then fold in sugar. Whip heavy cream and fold in. Pour into prepared soufflé dish and chill remove collar and garnish with cherries.
