Hominy Corn Bread

Ingredients

1 cup hominy
1 tablespoon melted butter or margarine
2 eggs, beaten
1 cup milk
1/2 cup cornmeal
1/2 teaspoon salt
1 teaspoon baking powder

Directions:

Mix together hominy, butter, eggs and milk. Add cornmeal, salt and baking powder. Let stand 5 minutes. Pour into well-greased pan and bake at 400°F for 35 minutes or until golden brown.
