Huevos Rancheros

Ingredients

6 eggs
6 canned corn tortillas
1 1/2 cups chopped onions
1 clove garlic, minced
1/2 cup bacon drippings
4 tomatoes, peeled and chopped
3/4 cup finely chopped hot pepper
1/2 teaspoon salt

Directions:

Sauté onion and garlic in 1/4 cup bacon fat for 5 minutes. Add tomatoes, hot pepper, and salt. Cover and simmer for 10 minutes. Remove cover and simmer for 10 minutes. Meanwhile, sauté the tortillas in remaining 1/4 cup bacon fat for 30 seconds on each side. Remove and keep hot. Fry eggs in fat remaining in skillet. Put one egg on each tortilla and spoon sauce over it.
