Melt butter over medium heat in a saucepan; stir in brown sugar, corn syrup and salt. Bring mixture to a boil, stirring constantly. Boil without stirring for 5 minutes; remove from heat. Add baking soda and vanilla. Mix well and pour over popcorn; toss to mix well. Turn popcorn out onto 2 baking sheets that have been lightly sprayed with non-stick vegetable spray. Bake at 250 degrees for 15 minutes. Remove from oven and stir; bake for an additional 15 minutes. Cool; store in an airtight container.
Tip: Save a corner in the garden to plant everlasting flowers such as strawflower, statice, globe amaranth, hydrangea and blue salvia. The flowers air dry beautifully and are oh-so pretty tucked into pails and baskets.
