Line a 15"x10" jelly-roll pan with aluminum foil; spray with non-stick vegetable spray. Arrange graham crackers in a single layer. Melt butter in a Dutch oven; add marshmallows, stirring constantly until melted. Place chocolate chips in a microwave-safe bowl; cook on high setting for 2 to 3 minutes, or until melted, stirring every 30 seconds. Add chocolate to marshmallow mixture. Stir to combine; immediately pour onto crackers and spread to edges. Sprinkle with chopped nuts. Cool until set, refrigerating if desired. Once cooled, remove mixture by lifting aluminum foil out of pan. With a pizza cutter, cut into 24 squares.
