Florida Pork Chops

Ingredients

cooking spray
4 pork chops
3/4 cup chicken broth
2 cups crushed tomatoes
1 onion, cut into 4 thick slices
1 lime or lemon, cut into 4 thick slices
1 teaspoon ground thyme
4 potatoes, peeled
1/2 teaspoon lemon pepper seasoning or black pepper
1/2 yellow bell pepper, cut into 4 thin rings
4 sprigs Italian (flat-leaf) parsley, garnish

Directions:

Spray a nonstick skillet with cooking spray and heat. Brown pork chops evenly in skillet, about 3 minutes. Combine broth and tomatoes in cooker. Place chops in a single layer (okay if need to overlap) in cooker. Top each chop with an onion and lime slice. Sprinkle with thyme. Set potatoes on top. Lock lid and bring to full pressure. Lower heat, maintaining pressure, and cook for 8 minutes. Let pressure release naturally for 10 minutes, then quick-release remaining pressure. Remove lid and season with lemon pepper. To serve, spoon tomato sauce over each chop, set a pepper ring on top and garnish with a sprig of parsley. May also be served over rice.
