Jody's Marinated Carciofi

Ingredients

1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon finely grated onion
2 teaspoons tamari sauce or to taste
1 bay leaf
16 small cooked artichoke hearts fresh or canned
1 to 2 tablespoon minced fresh parsley

Directions:

1. Place the olive oil, lemon juice, onion, tamari, and bay leaf in a large bowl and mix well. Add the artichoke hearts and toss lightly.
2. Refrigerate an hour or so, stirring occasionally, until chilled and well marinated. Sprinkle with parsley before serving.
