Lemony New Potatoes with Chives


Serves: 4

Ingredients

1 1/2 pounds new potatoes or fingerlings cut into 1 inch pieces
1 1/2 tablespoons lemon juice
2 teaspoons finely grated lemon peels
1/3 cup finely minced parsley
1/3 cup chopped chives
2 tablespoons olive oil
1/4 teaspoon sea salt or to taste
freshly ground black pepper

Directions:

1. Place the potatoes on a steamer basket that is set in a pot over an inch or so of water. Bring the water to a boil, cover the pot, and steam for 20 minutes or until the potatoes are tender.
2. Transfer the potatoes to a bowl. Add all of the remaining ingredients and mix well.
3. Serve immediately or refrigerate and serve chilled.
