Creamy Vegetable Soup


Serves: 6

Ingredients

1 cup diced carrot
1 cup cubed potato
1 cup diced celery
4 tablespoons butter
1/2 cup flour
6 cups milk
1/2 teaspoon tarragon
1 tablespoon parsley
1 teaspoon salt
1/4 teaspoon pepper

Directions:

Cook vegetables in large pot filled with 2 inches of boiling water. Drain. Melt butter in saucepan. Add flour and stir until smooth. Gradually stir in milk, stirring constantly until thickened. Stir into vegetables and add spices. Heat through.
