Heat oven to 425 degrees. Combine eggs, milk, 2 Tablespoons sugar, vanilla, salt and lemon peel in large mixer bowl. Add flour and beat one minute. Heavily grease two 9-inch pie plates with butter. Divide batter between plates. Bake 22 to 25 minutes, until pancakes are puffed and golden brown.
Meanwhile, melt remaining 1 Tablespoon butter in large skillet over medium high heat. Add remaining 3 Tablespoons sugar and apples. Cook, stirring, until apples begin to brown. Add maple syrup and boil 1 minute. Spoon apples into center of pancakes. Serve with additional maple syrup if desired.
