Shell shrimp and cut into small pieces. Cut the avocados in half and carefully scrape out meat, reserving shells. Cube the avocado meat and combine with shrimp.
Mix mustard, salt, and pepper in a bowl. Gradually add the oil, mixing carefully until the spices are dissolved. Add the vinegar, onion, and garlic and beat well. Pour over shrimp and avocado mixture and mix carefully. Fill shells with mixture.
