Finely shred or grate red cabbage. A food processor is great for this. Dip avocado slices in lemon juice to prevent discoloration. Combine cabbage with avocado slices and grapes.
For Dressing:
In a blender or food processor, mix together vinegar, sugar, onion, and mustard. Slowly incorporate oil. Stir in poppy seeds by hand. Combine dressing with slaw mixture. Chill until ready to serve.
