I always thought my mother was Betty Crocker. Mom was raised on a farm, walking every day to a one-room school. Her young life was filled with many trials and tribulations until she met, fell in love with, and married my father. With a hungry husband and five children to follow, she learned to make satisfying meals.
In 1967, we all moved west to Portland, Oregon, where Mom began her career in the restaurant business. Over the years, she owned two small diners where regular customers raved over every dish she prepared. There were people who couldn't start their day without one of her caramel rolls. I think work crews fight over who gets to do work on Mom's street, just because they know of the hot rolls and coffee they will be served.
I am proud to say that as large as our family has grown, we still get everyone together for every occasion. Mom fixes a fantastic feast of hors d'oeurves, dinner, and dessert. Of course, she cooks enough for an army, so there are care packages for each of us to take home and enjoy.
Mom has a magical way of taking what is available in her kitchen and fixing a wonderful meal. The greatest part of it is how she enjoys it. We all have our own special way of showing our love to people-Mom's is with cooking. She enjoys cooking and baking for others and does it in such a loving way that it makes everyone in her life feel special.
I could go on and on. She is one in a million.
