Before tossing the peas into the soup pot, you'll need to sort through them to remove any foreign objects. Spread the peas out in a shallow pan, and inspect them for any small rock pebbles or stones, grit, discolored peas, or dried and shriveled peas which should be discarded. Then place the peas in a bowl, and cover them with water. After a minute or two, remove any skins or split peas that float to the top. Finally, rinse the split peas in a colander.
