Serves: 5
Immerse the sprouts in cold water. Plunge up and down several times. The husks or hoods will rise to the surface. Skim off husks and discard. Change the water. Repeat process until most husks are removed, then drain. (This is for the soy rather than the mung sprouts. The hoods of the latter are delicate and don't really need husking.)
