Serves: 5
Wash the wok thoroughly with hot water and detergent. Rinse and dry. Heat 2 tablespoons peanut oil in the wok until the oil seems to move around at the bottom. Tilt pan so oil coats entire inside surface. Turn off heat. Let cool. Pour off the oil. Wipe wok with paper towel until its surface is smooth and lightly oiled.
Or: Clean, rinse and dryas above. Rub the entire inside surface of the wok with oil. Heat 1 minute over high flame. Rinse with hot water. Rub on more oil. Repeat the process. Wash carefully with hot water. Dry with paper towel.
NOTE: Iron woks are seasoned in this way to seal up the "pores" of the metal. This keeps the food from sticking.
