If the food is too salty, add a little sugar and vinegar during cooking. The next time you cook the dish, reduce the amount of salt first. If it's still too salty, reduce the amount of soy sauce to taste. If the food is too sour or vinegary, add salt. If it's too sweet or cloying, also add salt.
