Once seasoned, the wok should never be scoured with strong detergents or metal cleaners. Remove food scraps and excess oil with paper toweling. If food sticks, scour the wok with salt to build up a seasoned finish like that of an omelet pan.
NOTE: The Chinese scrape the wok clean with a stiff brush, rinse it in very hot water, then dry it immediately to prevent rusting by placing it over a gas jet for a few seconds.
