Pour water into a medium bowl; stir in gelatin until dissolved. Set aside. Pour sugar into a 2-quart saucepan; add reserved pineapple juice. Heat over medium-low heat until sugar has dissolved. Remove from heat and stir into gelatin mixture. Set aside until mixture is room temperature. With an electric mixer on high speed, beat whipping cream until stiff peaks form. Add pineapple and cottage cheese to cooled gelatin mixture. Fold in whipped cream. Arrange cherry halves, about 2 inches apart, in the bottom of a 6-cup round salad mold. Carefully spoon in salad mixture. Chill until firm, at least 2 hours. When ready to serve, unmold onto a chilled serving platter.
Filled with candies, a paper cone is a special way to spread glad tidings. Roll heavy paper into a cone shape and glue the edges. Once dry, ribbon threaded into holes punched on each side of the cone makes a handle. Left on a neighbor’s doorknob or a coworker’s chair, it’s a sweet December surprise.
