Cut potatoes in half lengthwise; use a spoon to separate the potato from the potato skins. Discard skins. Melt butter in a saucepan over medium heat. Stir in onions and cook for 2 to 3 minutes. Whisk in flour, stirring constantly until smooth. Stir in milk and increase heat to high. Continue to stir until mixture thickens. Lower heat to medium; add potato, cheese, salt and pepper. Heat through until cheese melts; stir in sour cream. Garnish as desired.
Give gift cards or movie passes tucked inside easy-to-make pouches. Fold a length of 3-inch wide ribbon in half; stitch the long sides together. Trim the short edges with scallop scissors and slip the gift inside.
