"Kentucky Jim's" Ribs

Ingredients

1/3 cup soy sauce
1/3 cup bourbon whiskey or apple cider
1/4 cup brown sugar packed
1 clove garlic minced
1/2 teaspoon ginger ground
1/4 teaspoon black pepper
3 pounds pork spare ribs

Directions:

In a large reclosable plastic bag, place soy sauce, bourbon or cider, brown sugar, garlic, ginger and pepper. Mix until sugar is dissolved. Cut ribs into 1-rib pieces. Place in bag, remove excess air and seal tightly. Turn bag to evenly coat ribs with mixture. Marinate for 1 to 2 hours at room temperature, turning several times.

Preheat oven to 350°. Remove ribs from marinade. Arrange in a single layer on rack of a broiler pan.

Bake in center of oven for 45 minutes, turning and basting occasionally with marinade. Increase oven temperature to 425°. Bake 15 minutes longer, turning and basting about every 5 minutes or until browned.

Note: If desired after baking for 45 minutes, ribs can be placed on a grill about 5 inches above medium-hot coals and cooked for 5 minutes on each side, basting as needed.
