Grandy's Mincemeat


Serves: 2
Total Calories: 1,700

Ingredients

2 1/2 cups boneless beef chuck boiled, ground
3 cups apples cooking, pared and cored
2 cups raisins
1 cup ground suet
2 1/2 cups sugar or to taste
1 cup beef broth
3/4 cup orange juice concentrate
1/3 cup cider vinegar
1 cup coffee
1/4 cup citron chopped
1/4 cup candied cherries chopped
1 tablespoon cinnamon ground
2 tablespoons nutmeg ground
1 tablespoon cloves ground
1 teaspoon salt or to taste

Directions:

Combine all ingredients in large pot. Bring to boil over medium heat. Reduce heat and simmer, partially covered, for 3 to 4 hours or until desired consistency. Stir and taste frequently adjust spices if necessary. Skim off any accumulated fat from surface. Can while hot, or cool and freeze in containers. Use for pies, cookie filling, or hot over ice cream.

Note: If making to can or freeze, it would make the most of your time and effort to double the recipe.
