In large bowl, cream together butter (or margarine) and sugar. Stir in flour, salt, lemon juice, and grated rind. Add beaten egg yolks and milk blend well. (Do not be concerned if mixture curdles.) Fold in stiffly beaten egg whites. Pour into greased 2-quart casserole. Set casserole into shallow pan of hot water. Bake at 325 degrees F. for 1 hour or until done. Serve hot or chilled.
