Traditional Pumpkin Pie


Serves: 6

Ingredients

2 eggs slightly beaten
1 (1-pound) can pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves ground
1 (13-ounce) can evaporated milk
1 puff pastry shell for 9-inch pie, unbaked

Directions:

In large bowl combine all filling ingredients in order given. Pour into pastry shell with high fluted rim. Bake at 425 degrees F. for 15 minutes. Reduce temperature to 350 degrees F., continue baking for 45 minutes or until knife inserted into center of pie filling comes out clean. Cool. Garnish with slightly whipped cream, if desired. Makes one 9-inch pie.
Note: To double recipe for two pies, use 1 can (29 ounces) pumpkin
