1. Cut chicken into 1-inch cubes and place in a shallow bowl. Combine all the marinade ingredients and pour over the chicken. Cover the chicken and let marinate overnight.
2. Thread the chicken onto 12 skewers. Grill or broil 6 inches from the heat source for 8 minutes, turning frequently. Arrange skewers on a platter and garnish with watercress and lemon wedges. Serve hot with additional soy sauce, if desired.
