Cook pork in a nonstick skillet for 5 minutes. Add juice and 1/4 cup sweet and sour sauce; heat until bubbly, stirring frequently until pork is cooked and glazed. Remove skillet from heat.
Arrange cabbage on serving platter. Top with zucchini and squash ribbons and pork. Sprinkle with noodles; drizzle with remaining 1/4 cup sweet and sour sauce.
