Suavy Sweet Potato Soup

Ingredients

2 cups finely chopped onions
2 tablespoons butter
2 (28-ounce) cans cut sweet potatoes
2 cups milk, divided
3/4 teaspoon curry powder
1/2 teaspoon salt
dash of ground red pepper

Directions:

Sauté onions in butter in large saucepan. Cook 6–8 minutes till soft.

Drain potatoes and blend in blender with onions, 1 cup milk, curry powder, salt, and red pepper until smooth. Return mixture to saucepan and stir in remaining 1 cup milk. Cook 5 minutes over medium-high heat till heated through.

Editor’s Extra:
Nice to sub chicken broth for milk, or use some of each.
